I felt like mushrooms were not sufficient, so I added tofu (which was too soft, I think maybe soy curls would have been better?). Also didn’t have red wine, so I used white wine + red wine vinegar + raisins blended in water to replace the red wine, lol.

      haha, necessity is the mother of invention - I even left in a few whole raisins that I had baked with the tofu and my partner loved them

      I keep forgetting polenta is an option, I was shocked at how easy it was to make - just bring 4 cups of water to boil, add some salt (1.5 tsp), and then whisk 1 cup of corn meal into the water. From there you just reduce heat and occasionally stir as it cooks, maybe add some butter at the end. It’s a little more work than making pasta or rice, but not that much more. It’s easier than making quinoa, for example.
