      the borscht has beets, cabbage, carrots, potato, and I made some Ukrainian meatballs using Beyond Beef, some home-made breadcrumbs, and vegenaise.

      The white stuff in the middle is a home-made cashew cream (I like to add sherry vinegar to make it like sour cream), and the drizzle is just vegenaise. Dill is the green garnish.
