I would suggest UTM due to ability to run VMs for different CPU architectures. Virtualbox is limited to x86.

Also you can try to do that with something like xvfb which would start X session and let nvidia-settings to apply it’s profile.Probably 😅 .
You may set profile you need once, save it into nvidia-settings file and load on every startup.
You can save money with mkvtoolnix and use hardware encoder with ffmpeg to speedup conversion.
You should change priorities via apt preferences making experimental repo having lower one.
