Where I live its common for tacos to have curtido on top which is like a fermented cabbage cole slaw with jalapeños, I recommend!

It is considered Salvadorian but its common throughout Latin America now for being objectively delicious.
Cover it with pico de gallo. Now you don’t have to look at it and it tastes like pico de gallo
I’ve been using beef-flavored TVP crumbles and dairy-free cheese to make tacos lately. They’ve been pretty good and look like tacos lol.
The kids call them “instant tacos” and have no idea they’re vegan.

Just make it less messy and warm the tacos, and all’ll be fine
Well that and skip the cheese. Vegan cheese isn’t there yet.
I find the longer it’s been since I’ve had dairy cheese, the more I like vegan cheeses. Either they’re getting better, or it’s some sort of Stockholm syndrome.

Depending on where you live the Cathedral Plant Based cheese is top tier. I don’t know how but it’s really good.
That vegan cheese has been carefully engineered to be the worst thing ever when cold and probably pretty decent when melted.
