Probably pickled onion. Like in the rollmops pickled herring jars.
Usually it’s just regular raw onion. And there’s actually a lot of taste in the herring due to gibbing.

I’ve never had it, but I’d probably love it. If I list my favorite meals, most of them would include fish.
You should try it if you ever get the chance. The flavor is really subtle and it just melts in your mouth.
