When I was in California, I saw perfectly peeled lemons lying under a friend’s lemon tree. He told me the rats did it - they ate the peel but were very careful not to bite into the sour inside.

If you have access to litmus paper you can do a fun experiment- test your saliva PH, then think about biting into a lemon and test again. It will go from roughly neutral to very basic in preparation for the incoming acid.

I like lemons a lot (we have a huge tree), but don’t think I’d eat one like that. But looking at the picture really makes my mouth water because my brain knows how sour biting into that would be.
There are actually some lemon varieties with a thinner grind that are meant to be peeled; cant say what the name of a specific species though; also depending on where you live limes with a tinner grind may be easier to find.
Limes are terribly bitter though. Not really comparable to lemons in regards to their flavor.
I did this recently, peeled a bunch of lemons in a fermentation experiment. The ones I peeled were extremely difficult to peel relative to oranges and tangerines. The tendency of peeling to cause a minor hangnail was particularly painful after around half a mason jar full.
The worst part was that the batch got mold contamination after the first 2 weeks and totally ruined all the effort.
Both of these problems you had are why you should wear gloves and sterilize all equipment before fermentation experiments.

Fair, nails are extremely useful. They also contain a lot of bacteria that can ruin fermentation experiments. Other tools exist.

I have never has a reason to peel a lemon. I don’t have to when I juice them and I don’t have to when I slice them for a drink. So why would I?
I was gonna say, it looks like a peeled orange, but yellow.
I did, but they never looked like this because they kept most of the white layer beneath the peel and unlike some oranges it was impossible to pull off.
