Even if you chop it up small and cook it into something, for me it ruins a meal and gives it this horrible aftertaste. Probably best described as puke, that kinda acidic taste

You mentioning eating the stems raw made me think of it and instantly increased my saliva production. It’s not easily palatable, it’s intense, you’re right, but man is it good. I grew up on that stuff. Cracking that raw stem and munching it while doing gardening is a stimmy miracle

I “peel” celery like how I peel a potato. So basically peel off the stringy part. Then I cut them diagonally or at a 45° angle. I then stir fry them with carrots and string peas and baby corn and shallots with some garlic and salt.
It’s so crunchy and fresh tasting.
Damnit I wish I had some good shit to flavor my stew with.

Celery loses most of it’s flavor quickly after harvest. When it’s actually fresh it’s extremely tasty.
